Homemade Chicken Stock

Ingredients
1 Whole Chicken or Stewing Hen
Olive Oil
1 yellow onion, quartered
2 celery stalks, roughly chopped
1 carrot, roughly chopped
3 bay leaves
Steps
Cut chicken in two and season all over with salt. Let sit for an hour.
In a large dutch oven or stock pot add olive oil and heat over medium-high. Brown chicken until caramelized all over.
Add chopped vegetables and bay leaves to chicken then add water until chicken is just covered, about 2 quarts. Season with salt and simmer with lid on for 30 minutes or until chicken is cooked through.
Remove chicken to cool, then strip meat from bones. Return bones and gristle to the pot to simmer gently for another 30-45 minutes.
Strain the stock and season with salt if needed.
*Note: If only using bones, add bones, vegetables, and water to pot and simmer gently for about 2 hours or longer as needed to develop flavor. Taste and season with salt.
