Nannie's Breakfast Casserole

A cherished family recipe that can easily be frozen for another day.


Ingredients

  • 3 cans cresent rolls

  • 1-2 pounds ground pork sausage

  • 4 cups shredded cheese

  • 20 eggs

  • 1.5 cups milk

  • Salt, pepper


Steps

  1. Cover a half sheet tray with the crescent roll dough, laid out as a crust. Be sure there are no holes and the dough is pressed up the sides of the tray.

  2. Brown the sausage until there is no more pink. Drain, then sprinkle over crust. Layer with shredded cheese.

  3. Whisk eggs, milk, salt, and pepper. Sometimes we add Cholula or chopped herbs.

  4. Bake at 425° for 18-20 minutes or until eggs are cooked through.

  5. Variations include adding chopped vegetables or making an entirely veggie version.


    *Note: This recipe makes one half sheet tray of casserole. The original recipe is for a 9x13 pan. If you have that size pan, use 2 cans of crescent rolls, 1 pound of sausage, and 1 dozen eggs. To cover a half sheet tray, you won't use the entire third can of crescent rolls.
