Baked Eggs with Greens

A simple yet hearty breakfast that can be topped with whatever's on hand.
Ingredients
8 eggs
Large bunch chard, kale, or other hearty green. Stems and leaves separated and chopped.
Small onion, chopped
2-3 garlic cloves
1/3 cup Heavy cream
Salt, pepper, red pepper flakes
Avocado, herbs, hot sauce for topping
Serve with toast or potatoes
Steps
In a large, shallow pan or cast iron, sauté onion and garlic until tender over medium-high heat. Add stems and cook until tender, about 5 minutes.
Add heavy cream and simmer for 2-3 minutes. Add leaves and a pinch of salt and red pepper flakes, cook until wilted.
Crack eggs on top of greens, season with pepper, and place lid to cook for 7-8 minutes, or until eggs are set to your preference. Top with avocado, herbs, hot sauce, cheese, sunflower seeds or whatever else you like. Serve with sourdough toast or breakfast potatoes.
